"Pork Loin Roast Recipe"

large garlic clove-minced

teaspoons Salt
1/2
teaspoon freshly ground, black pepper
1 teaspoon crumbled dried thyme
1 bay leaf crumbled
3 lbs rolled and tied pork loin roast

Combine first 6 ingreients in a small bowl. Rub over roast evenly. Refrigerate covered minimum 8 hours, turning roast occasionally.
Place rack in roasting pan and place pork on the rack
Roast until thermometer inserted in center of roast registers 160 degrees F (about 1 hour 25 minutes.).
